Geraldine Garvin, multi-award-winning* chef is co-owner and our Head Chef at Jackson's. (*Including World Grand Prix 2006 Best Junior Chef in Ireland, and Culinary World Cup 2007 Silver Medal Winner.)
Geraldine believes that her passion for food is best reflected in her strict approach to changing the Evening Menu on a seasonal basis, incorporating fresh locally-sourced ingredients as they naturally come into season. As such, she has an innovative flair for creating a variety of Game, Seafood and Vegetarian dishes from seasonal produce. Seafood-lovers are sure to be pleased with the choices on offer.
The style of the food here is best described as Modern Irish Cuisine, with strong European influences – particularly the time-honoured favourites of Mediterranean cooking. The seasonal Pasta dishes from the Evening Menu prove very popular, while the Lunch Menu’s Pasta with Beefstrips in Chilli Cream is a much-loved signature dish of Jackson's. (Note that all of our meat and fish is sourced within Ireland.)
When asked about her favourite dishes to cook, Geraldine will tell you it’s the Vegetarian options, where she gets to use an array of pulses, nuts, beans, grains and spices, as well as Irish hand-crafted cheeses. She believes that many restaurants don’t give enough attention to Vegetarian dishes, and that it’s one of the most challenging areas of cooking, demanding greater creativity from the chef.
All of our pastries and savoury breads are baked daily here at the restaurant by our chefs, and the deserts range from the new and exotic, to nostalgic favourites – affectionately given a Jackson's twist.
We are happy to cater for diners with special dietary requirements, such as coeliacs and those who are lactose intolerant.
